I am about to embark on a new Program and one of the exercises is
Decline Sit Ups, 10 sets of 3 at 80% of 1RM......

How would I do 3 decline sit ups @ 80% 1RM???

Hold a Plate to chest??

Yes, you can hold a plate to your chest. I would definitley get a spotter for this exercise as well.

maybe try hanging leg raises if you can or some leg raise movement over them...also search dragon flags

Absolutely agree on the hanging leg raises - they are by far favorite ab exercise! :D
