The "Anabolic Window" is something that's often debated, but it seems the consensus is that your total daily intake of protein is what matters most, so what you're doing should be fine!

Hotel gyms are not always as good as their site shows Seriously. I've seen some extremely pathetic gyms, but sometimes you can manage to get creative and get a decent workout in. A lot of gyms offer day passes, and there are a lot of gyms that give you nationwide access: LA Fitness, 24 Hour, Planet...

I had a meniscectomy on knee about 7 years ago. Never been the same since. I've found that squatting and REALLY paying attention to form is the best thing for me. Don't feel embarrassed offloading the weight and really keeping the form tight.

Check out gyms in your area? I don't have the space in apartment nor do I have the money to invest in all the equipment that I need. A 2-year 24-hour fitness membership from costco is like $379 or something.
