I'm not really interested in increasing the size of legs. I really just want the ability to do squats for 8 minutes straight. average 2k erg time is a little over 6 minutes. So if I am eventually able to do squats for 8 minutes straight, then a 2k will seem like a breeze.

It's fine
If you're only trying to lose 3 kg, your routine should be fine. However, I would recommend doing HIIT no more than twice a week, as it is extremely tough. Also, I would recommend breaking your weight training into muscle groups.

Try 5 days a week
7 days is a lot. You could do it, but I wouldn't recommend it. If you're trying to build muscle mass, then I definitely wouldn't recommend it. Have you tried high intensity interval training? It's an anabolic workout that burns calories like none other, before and after your workout. If you're trying to lose weight , I'd recommend high volume, low weight sets for weight training, and doing your HIIT in the early morning. And of course diet...
