In an attempt to make this question as short as possible i will summarize.
Ive been doing full body 3x a week for about 6 months. Off days i do calisthenics, kettlebells, heavy bag, plyos, body weight, etc. Ive hit plateaus but pushed past by adding weight and improving form in some cases. weight days consist of deadlifts, bench presses, pull/chin ups, dips, and various other compounds. It is very high intensity with no more than 60 secs rest between sets. diet is on point. I have had a definite increase in strength and loss of body fat, but i thought i would have more muscle mass. And as much as i try to switch up exercises, im geting bored and dont feel out of breath like i used to. Is it time to switch to a split maybe? Any suggestions for other workouts?

deadlift - 250-270 3 -4 reps 10 sets
bench - 250 to 300 3 reps 10 sets
Pullups - sets of 16-18 then 10 to 12
dips - 25 then 15-18

I have been on full body 3x a week for about eight weeks and im about to switch it up to a split routine 4x a week. Im also switching to the 3x10 routine, how does that feel for you? You could try changing the weight your lifting or switch to a split routine. I feel like the best way to overcome plateaus is to switch things up. What do you mean by your diet is on point? I know calorie intake is one of the most important things for gaining mass, im having a hard time eating that much food myself but it may be that you are not eating enough. Maybe you are and this is out of realm.

3x10 worked out great. The increase in strength was incredible. Yesterday was weight day, so i tried switching it up a little bit. Instead of doing 3x10, i lowered the weight (slightly) and did 5x5's or 5x6's. I changed up chin/pullups and dips to lower reps, much slower and a longer pause. I am afraid of not getting the same intense workout if i switch to split. i like working every muscle 3x a week. i dont think i can drop down to once or twice. Also i incorporated body weight exercises at the end of workout. I have been practicing them over the past few weeks trying to perfect them, but yesterday i spent some actual time on 'em.
