If you want to weigh them, og for raw weight, because some carbohydrate is lost when cooking, but potentially the potato may absorb some moisture if boiled, but obviously not when baked, but will if you roast in some kind of fat and will if you add things like butter and / or milk or cream into the cooking process, when you're making mashed.

Weighing raw, means you'll negating any weight discrepancies, thrown up by different cooking methods.

I weigh most of food. When I eat sweet potatoes, I weigh them after cooked because they shrink when you cook them. Think about it...why would you weigh uncooked sweet potatoes if you eat them cooked? I weigh the food depending on how I eat it. If I eat it raw..I weigh it raw. If I eat it cooked..I weigh it cooked. Hope that helps.
