Celiac disease/Gluten intolerance

Hello again,

I've just been diagnosed with Gluten Intolerance and I'm awaiting test results to find out if I have Celiac disease. (And also being tested for lactose intolerance via hydrogen breath test.) I've been able to lose 30 lbs. over the past 8 months thanks to diet and exercise, but this change in diet has me completely overwhelmed. I just reorganized kitchen into what I can eat and what I can't. There's not much left except for fruits/veggies/meats in the fridge. No soups, no pasta, and not really any good carbs for running fuel, and this majorly complicates cooking. On the bright side, this will prevent me from even thinking about eating processed food because wheat/barley/rye is in just about every form of processed food out there!!!

Right now, I can eat veggies, fruits, rice, meat, and cheese/milk in extreme moderation (although that may be gone from diet later this week depending on lactose intolerance testing). I've been to local health food stores and am croaking over the prices of gluten-free foods and I'm wondering how in the world I'm going to be able to do this on a budget. I've come to the conclusion I'm going to have to pay the $16 for a 4lb bag of gluten-free flour and make it all myself if I'm going to have any semblance of bread in life because I'm not paying $6 for a quarter loaf of Gluten-free bread. Does anyone else have celiac? Boss, do you have any suggestions for me as to how to get a balanced amount of carbs and calcium in diet? I was eating about a 35% carbs/35% protein/30% fat diet consistently before having to do a gluten challenge for a month prior to testing.

I found her site yesterday! Thanks for the tip. :) I'll stick to almond and coconut flour since I've consistently heard it's the best flour to use in GF recipes. It's just going to be a huge adjustment. Like relearning cooking and shopping. Trying to get husband to understand that even a little Gluten can cause me problems. I'm starting to wonder if son (who has Cystic Fibrosis) might have gluten sensitivity too. If so, I'm tempted to just make our household Gluten-free and husband can eat his gluten meals out with friends or at work.

THANK YOU! For some crazy reason I've been craving cornbread since last week and I love(d) jiffy cornbread. I will definitely be trying this recipe! :D
