I'm glad you brought this up. Yes, each ounce of unsweetened chocolate contains 15g of primarily SATURATED fat (45g total in this recipe). HOWEVER, not all saturated fats are the same. The type of saturated fat found in chocolate is mostly stearic acid. Although stearic acid IS a saturated fat, it does not raise LDL cholesterol as do most other saturated fats. Moreover, stearic acid is converted in the liver to oleic acid, a heart-healthy, monosaturated fat.
When you also consider that dark chocolate contains a high concentration of potent antioxidants (phenols) which help prevent LDLs from causing plaque buildup in the arteries, this recipe is much healthier than would appear merely by looking at the number of grams of saturated fat. And surprisingly, unsweetened chocolate offers a good amount of fiber as well (5g. per ounce).
Another type of saturated fat that often gets an unfair bad rep is Coconut Oil--which is 66% MEDIUM CHAIN fatty acids which offer many health benefits over all other types of fats.

We have to be careful when analyzing nutrition information. Not all saturated fats are equal--not all carbohydrates are equal.

LDF Cholesterol causes Arterial plaque, since when?
Arterial plaque has never had any proven cause(s). Not to knowledge.
Also not all protein has 4 calories per gram, Protein can sometimes have 8 calories per gram instead.
