I was just wondering if people could give me ideas for cooking chicken. What do you marinate it with or spices you add. I'm not a big chicken eater and need some healthy ideas. Thanks.

I use Mrs Dash - usually the Table Blends flavor because it goes on almost anything. But there are several different flavors to help change it up. They are salt free and VERY tasty :)

You could also try brushing a bit of olive oil over it before you put the seasoning on to give it a bit more flavor - and you will be adding some healthy fats. I have a garlic-infused canola oil that I sometimes use. It gives it a little extra flavor :D If I continue to eat chicken the same way every day I get sick of it too!

I usually dice chicken in fairly small bits and fry it on the pan with favourite spices over high heat. Yoghurt, guram masala, turmeric, chili and basil works well. Inspired by Noosk.

Ms Dash also has some other really tasty flavors... fiesta lime, chipotle, extra spicy garlic and herb, and tomatoe basil (which is AWESOME).

I cook chicken using one of the above spices in a nonstick pan with a bit of nonstick cooking spray. After that I add it to veggies, salads, wraps, tacos... Eating healthy doesn't have to be boring or bland. I'm currently training for 4th figure competition and even at 2 1/2 weeks out from next show diet is far from bland. Add some spices! At the very least spice brown mustard and salsa can really help to add some flavor to that chicken. :)

thanks everyone for your suggestions. It really helped me. :) And gave me some ideas. I'm going to the store tomorrow morning!

have a new one for ya!
2tbsp tomato puree
1tbsp mustard (or mustard seed)
1tbsp oregano
1/2 tbsp honey
1tbsp balsamic vinegar

mix it all up and coat chicken then grill. deeeelicious!

Made this for the first time last week. It's new favorite!

To prepare chicken:

Step 1: Marinate 6 chicken breasts (boneless/skinless) for 1 hr. in 1/4 c. lemon juice, 2 tsp. minced garlic. Discard marinade.Pat chicken dry.

Step 2: Mix coating for chicken:

3 TBSP ground cumin

2 TBSP Light Olive Oil

1 tsp salt

1/2 tsp ground pepper

1/8 tsp cayenne pepper

Mix all ingredients together and rub ch. breasts with mixture. It will be a light coating. Prepare the grill and preheat to 350. Once the grill has reached temperature, I turn off the middle burner and keeping outside burners at medium (should keep 350 temp. consistent). Grill for approx. 20--25 minutes turning every 5-10 minutes.

Step 3: While chicken is grilling:

1. Cook Rice- I use Royal Blend Rice Blend which includes Texmati, white, brown, wild and red rice. Follow directions for 6 servings. (Feel free to use rice of your choice. I use this because it's 20 minutes from start to finish).

2. Grill asparagus: Place washed asparagus on a piece of foil (6x6 approx) sprinkle with thyme, pepper and dash of garlic salt. Drizzle light olive oil and place on grill towards back and turn when turning the chicken.

Step 4: Prepare salsa;

2 lg. plum tomatoes (seeded and chopped)

3 avocados, pitted, peeled and chopped (very small pieces)

1 TBSP minced green chilies (more if you like)

1/8 tsp. cayenne pepper

2 tsp. cilantro



Step 5: Stir together all salsa ingredients easilty as not to mash avocado.



Step 6: When rice is done, chop up grilled asparagus and toss with rice. Serve chicken with a TBSP of salsa and rice on the side.

I like to heat up some fat free italian dressing and dip chicken chunks in it...pretty tasty! And SUPER easy to make when you're in a time crunch!

I made some chicken today that tastes pretty good. I just put a lot of seasoning on like you guys suggested. I'm always afraid of saminila posioning when i cook chicken but its not pink so I'm assuming okay. Thanks for all your suggestions it really helped. I didn't grow up eating much chicken and have never ate a lot in the past so it helped a lot all of your suggestions. :)
