Want you? I NEED you guys in life! You are all like workout pen pals! I may never get to meet any of you in person, but I value the connection we share here, and the friendships that come from it. :D

I'm home today (son is sick with sinus drainage and the blahs - :( ) so I tried a new twist on an old favorite for lunch today...most of you may have had "salmon patties" before, but I grew up having "tuna patties". I luvs me some tuna patties! So I wanted to make some - but try to keep it healthy so here is the recipe I came up with:

1 can of solid white albacore tuna
1 egg
1/4 cup of Whole Wheat Flour
1/8 cup of diced green onion (this is an estimate - I just eye-balled it  )
1/8 cup of green B. pepper

Mix together. Then in a skillet, pour just enough EVOO to coat the bottom. Spoon the tuna patties (I shape them into approx. 2" round patties) and cook in medium heated skillet - brown both sides til golden brown. Salt & pepper - enjoy! I ate mine with some ketchup. son even liked them - even with the "green things" in them!) ha!
You could really add alot more veggies to the mix. I want to try it with diced zucchini and carrot, maybe even a little jalapeno if I'm (borrowing a "Les" term here ->) feelin' saucy!
Or even some cauliflower or broccoli, call them the Brentyboy Patties - eh Brent?!!
I am going to try these tomorrow. I am always looking for new stuff to try! thanks

yeah Bonnie, I am amazed at how speed is improving doing these series of HIIT intervals. Slowly but surely, I can maintain sprints a little longer and a little faster. :D

Todays workout:
25 minute intense Kickbox video workout

2 x 8 x 2 reverse lunges
2 x 8 squats (bodyweight)

1x12 Incline wide pushup
1x12 Decline wide pushup

2x10 tri-cep dips

2x10 reverse crunch
2x15 scissor kick leg lifts (floor exercise)

legs feel like jelly after that kickbox workout and the lunges and squats!
Not sure if I'm supposed to work them on the day after HIIT?

out of time...have to cook dinner now - planning on spaghetti w/ Whole wheat pasta, steamed carrots, broccoli
see ya in the threads! :D

Had a little dose of reality today....stepped on the scale and have gained 2 pounds  I know that scales dont represent the whole truth, but I was feeling like I might had gained a pound or two.
I know it can't be from the lack of working out (I think I'm pretty consistant with that and have a pretty good "plan" going)...so it must be from diet. a few too many "bites" of this and that snuck in daily meals. That is why I have begun to list daily food list.
Today is a workout rest day - so nothing to report there.
Still not organized enough to pre-pack meals, but hopefully after grocery shopping on Saturday, I'll be better prepared for next week :D

Todays meals and snacks:
8:00 a.m. Drive to work: fruit smoothie w/protein powder
9:30 breakfast: Multigrain sunflower seed bagel w/chicken, cheese, egg
no snack - wasn't hungry
1:30 Lunch: mixed greens salad w/chicken strips, tomatos, broccoli, cabbage, carrots, shred.cheese & sunflower seeds, half a packet of ranch dressing (weakness - need suggestions here)
6:00 pre dinner snack: corn tortilla chips w/picante red sauce
9:00 Dinner: Hamb mt. browned, drained & rinsed for taco's w/corn tortillas, fresh homemade guacamole (avocado, tomato, red onion, green onion, cilantro) & shredded 2@ mozz/chedd. cheese
I have some whole leaf Romaine lettuce I might substitute for the tortillas on tacos  save a few calories there...
not sure about evening snack...usually allow myself a little "cheat" dessert on Friday...but after this mornings weigh in...I"m thinking maybe not!
maybe some PB celery sticks? that would make me smile
I usually go to bed around 11:30 p.m. to 12:30 a.m. - get about 5 to 6 hours of sleep each night, getting up at 5:45 to 6:15 a.m No wonder I'm too tired to workout in the morning! Could this lack of sleep affect weight loss? and if so, how? I always thought that the more hours I am awake and active, the more calories I would burn. :?
any suggestions, advice, better meal planning would be greatly appreciated!

First - I am no expert as you know - own diet needs to be tweaked. But I have some observations, some that I also need to incorporate in daily planning.

1) Bagel? Multi Grain or Not - lots of calories - I haven't had a bagle (and I love them!) in a very long time
2) Salad Dressing  I also need to change Light Rasberry Walnut for Vinegar and Oil - lots of sugar in mine! Check the lable and see if you can switch it out for oil & vinegar. I'd appreciate other suggestions on this!
3) Before dinner Snacks - mine is Pita chips and Hummus - probably should eliminate these. Picante sauce sounds good though -it's those darn chips!
3) Sleep - you need 7 good hours of sleep. I go to sleep early but wake in the early morning (3 AM - 4 AM) and I need to force myself to stay in bed and hopefully got more sleep in.

Now the experts can weigh in - I'll be watching too!

Gaining 2 lbs *could* be just a temporary water retention moment too!

Hang in there Lynne! :)
