I'm home today (son is sick with sinus drainage and the blahs -) so I tried a new twist on an old favorite for lunch today...most of you may have had "salmon patties" before, but I grew up having "tuna patties". I luvs me some tuna patties! So I wanted to make some - but try to keep it healthy so here is the recipe I came up with:
1 can of solid white albacore tuna
1 egg
1/4 cup of Whole Wheat Flour
1/8 cup of diced green onion (this is an estimate - I just eye-balled it)
1/8 cup of green B. pepper
Mix together. Then in a skillet, pour just enough EVOO to coat the bottom. Spoon the tuna patties (I shape them into approx. 2" round patties) and cook in medium heated skillet - brown both sides til golden brown. Salt & pepper - enjoy! I ate mine with some ketchup. son even liked them - even with the "green things" in them!) ha!
You could really add alot more veggies to the mix. I want to try it with diced zucchini and carrot, maybe even a little jalapeno if I'm (borrowing a "Les" term here ->) feelin' saucy!
Or even some cauliflower or broccoli, call them the Brentyboy Patties - eh Brent?!!
