Hard Boiled Eggs
So I've found hard boiled eggs to be the quickest and easiest snack and good protein source for myself. I have about 3 to 4 a day but usually only have one yolk. Is there anything unhealthy about this or anything I should be concerned about?

I love hard boiled egg whites! It's taste good, it's cheap, easy to make, quick to eat, cheap, and good source of proteins

how do you think it would taste if you added some avocado to it? I'm obsessed with avocados here lately! I even used some homemade guacamole as spread for chicken sandwich - it was great!

Egg Yolks also contain Lutein a substance that help to possibly prevent Macula degeneration, (prevention of central vision loss), at roughy 1.1mg's Lutien per Yolk. Also Zeaxanthin another Carotenoid is present. They both can convert to Vit A.
Normal Eggs are roughly 60 / 40, LDL / HDL cholesterol. There are theories or hypothesise abound, that dietary Cholesterol, has little effect on Blood Cholesterol, but better safe than Sorry.
You can get Omega Eggs, (Chickens fed some Flax), and the Alpha Linolenic Acid, does convert in part to EPA and DHA the Fish Fats. These Eggs typically yield about 0.5g less Fat, but 1g Carb, so about 0.5 calorie difference.
This would potentially be okay if you wanted more Yolks, but for normal Eggs, 1 Yolk a day would suffice. Don't forget through Omega Eggs would be a little pricier. Farmers spending more to feed Chickens Flax, yada yada yada, you get the farmer, consumer price thing.

Oh yeah... If no ones tried pickled eggs yes I suggest you go make a batch, they'll be ready in a week. Just try them before you say no...
