broccoli

Post by natrix »

So I boiled myself a stalk of broccoli tonite and ate it with a little rice. I'm wondering what anyone can tell me on whether boiling broccoli sucks a lot the nutritional value out of it?

Steaming is a better alternative. Broccoli is a good source of Vitamin C which is destroyed by heat (cooking) and exposure to air. It is highly water soluble and easily removed from foods cooked in water. Steaming exposes broccoli to heat for a shorter amount of time, thus retaining more of the nutrients.

Steaming is definitely better for all veggies as more of the nutriends will stay in the vegetable.

Just an interesting fact:
Veggies like broccoli, zucchini, lettuce, celery, cauliflower and asparagus use up more energy (calories) than they actually contain.

You're referring to what's called "negative calories." Technically you can say some foods burn more calories( through digestion, absorption, metabolization) than they contain, but so many factors affect metabolism (body size, composition, activity)that it's impossible to say whether you'll burn more calories eating celery or an apple.
