college student stuck on a meal plan

Okay so I read everyone food journals about how much they eat and I can just not believe it!!! 1. they eat so healthy and 2. they eat so much!!!! its crazy! But then I realized that I only think that because I'm only allowed two meals a day because of meal plan with school. I get lunch and dinner... usually for breakfast I steal a banana or apple from the caf the night before. so heres what I usually eat throughout the day.

Breakfast: Apple/Banana
3 glasses of water
Lunch: Salad w. Ranch dressing (i kno its not healthy but i LOVE it), some spinach leaves, croutons, sunflower seeds, cheddar cheese, and white egg.
3 glasses of water
Dinner: Bowl of LIFE cereal with pineapple or peaches in it.
3 glasses of water.

I know I prob. should be eating meat or something else but you have to understand the caf food is disgusting... i mean I got corn the other day and couldnt eat it because each kernel was dripping in butter and oil...
We do have something called a union where I can sub a meal for other food such as a protein bar or chicken wrap or something from the grill (nuggets, pizza, etc.)

Any help that someone can give me would be amazing... I dont want a diet like this but I dont think theres anything else I can do.

couldnt you make your own food and take it with you?

well I paid $2000 for this meal plan all year... id rather now buy own food in addition to the meal plan.

what do you want to know exactly?
How you can supplement what you are already eating with healthy snacks?
Please clarify....

just wondering what everyone thinks... too little of food? should i eat healthier? should i have protein bars? etc. im not looking for a particular answer i just want to lose some weight. i also workout every day and burn anywhere between 300-700 calories a day.

Bossman is the real expert on nutrition so I'm sure he will post very soon on this but in the meantime:

I would say you're not eating enough. If I ate that little I would feel faint! First off you're definitely not getting enough protein, it will be hard to build any sort of muscle on your current amount. Could you have something like yoghurt or cottage cheese with your fruit in the morning?

What sort of workout do you do and what time of day do you normally do it?

How long have you been eating this amount of calories? I would have thought you'd defintely be losing like crazy on this amount!

So let me get this straight. Is this the diet plan you paid for, or did you ditch the plan in favour of this?

its not a diet plan i paid for... its what i choose from the cafeteria that I paid for... its either that or Mac & cheese, Chili, Pizza, Burger, Hot Dogs, Bagels, Grilled Cheese, Fries, Sandwhiches, and then we have a Salad Bar, Cereal Bar, and thats basically all they have at the caf... so those are healthy choices i get to choose.
