Proper nutrition for odd work hours?

I have an occupation that switches between day and night shifts. I work 4 day shifts (6am - 6pm), off 2 days, then 4 night shifts (6pm - 6am) and then 6 days off. I work out consistently 4 to 5 days a week between work hours (weights and cardio during each session). The job is office work for 12 hours a day behind the computer, so no physical activity.
During night shifts I will eat at opposite times of day shifts...i.e. breakfast at 4 in the afternoon, lunch at midnight, and dinner at 7 in the morning.
I'm having trouble with metabolism and losing weight. Any suggestions to get around this type of diet or how to maintain a more consistent diet routiune without starving myself or over eating at times.
