Potentially too much exertion, actually putting Fat on, from too low calories, or calorie increases are too frequent, or too high, not allowing for proper adjustment, causing caloric excess, and some Fat gain, also the exertion could be burning some muscle, which can cause increased Fat stores.

Possibly good healthy nutrition, but the portions or meal content aren't quite right.

Possibly some weight gain is water weight, particularly with a reasonably Salty diet, should your Salt intake be a bit high, as that can cause Water retention.

We'd need to see the sort of plans for diet and exercise she has bene using recently.

This mean training days, and weights/ Cardio regimes.

Diet. Meal times, and meal types.

she needs to build muscle which you do when you're recovering but with 1 day off a week, she doesn't have the chance to...have her do 3 x 30min wts essions (free wt compounds only apply - no curls, ext, raises etc) and follow it with skipping, burpees etc and some intervals...keep the walk in too...this is 3/week and an easy day which is much better...also her activity level was probably far too much for her cal intake so she was breaking down muscle and storing fat (famine situation) so you shopuldnlt really need to alter cal's at this stage but keep gradually increasing as planned...at 125pds she should aim for 1500ish a day

let me ask you this...

Is she or you the type of people who worry about what u see in the mirror or the numbers on the scale because...

chances are that if your girlfriend (who once looked good at 125 pounds) gained ten pounds after following your strict diet and workout routine - Looks better than she did en she weighed 125 pounds because...

I think it's all muscle and maybe some water gain (with a tad bit of fat)

I'll tell her not to freak out and just look in the mirror to see how much better she looks.

10 pounds (or less) of muscle make you look better & slimmer

You're jumping the gun. What you are doing is right but it takes MUCH longer than this to repair her metabolism. You are doing the right thing. As hard as it is, she just needs to be patient. I have worked with a huge number of women who have struggled with undereating, bulemia, etc. It can take a long time before their bodies start burning fat efficiently, but it WILL happen.

I would advise you not to change what you're doing with her. Just give it more time.
