I have been reading through the forums etc about training and noticed that "sugar spike" comes up quite often, what is it and how do i avoid it so that fat burn can be optimised after weights training?

You need a Sugar Spike after workouts. The Brain for one functions using Sugars, and Bloodsugar elevation is desirable afterwards, when Bloodsugar is low.
You shouldn't avoid it, but you should use a Carbohydrate source like Maltodextrin, which is high GI, to spike Bloodsugar, and also will help replenish Muscle Glycogen as it is Complex not Simple.

should we use maltodextrin, can any type of fruit help?

Well some Fruit like Banana can help, but as the sugar is simple, Glycogen replenishment then becomes an issue.
The other things you can have, if you don't want Maltodextrin, are other sources, like Rice perhaps, perhaps a grain like Corn, or there's another kind of Maltodextrin type substance called Palatinose, from memory also called something like Isoglucanol, or something like that.
