Confused with fats, bad n good cholestrol in oil.

Hi everyone.. i'm a newbie to this site.. i'm hoping for some enlightenment from all u experts in here... what are the difference between the bad cholestrol n good cholestrol in cooking oil, for example canola oil or olive oil? And what is mono saturated, poly saturated saturated fats? And if i deep fry something in cooking oil that has lots of good fats, does it makes the food healthy? And i've been hearing much talk about coconut oil in the health industry, but it's divided... some say it's good for health n helps to burn fat, others say that it's still unhealthy n will clog up ur arteries.. sorry if i'm long winded or asking stupid questions.. i just wanna learn.. :wave:

Any fat that is partially or fully hydrogenated is a bad fat; pretty much all experts are going to agree on that. Most will agree that avocado oil and cold-pressed olive oil are good fats.

Beyond that it might get a little less black and white. Personally, I like coconut oil, particularly for cooking as it is stable at higher temperatures. I also like the taste of it. Some still say because coconut is saturated fat it's bad, but it's a medium chain fatty acid and acts differently in the body than other sat fats.

I don't like to heat olive oil over high heat but I do use it as finishing oil or in salad dressing.

I avoid soybean and canola oil because they are generally GMO. I've seen pros and cons to things like sunflower and safflower oil, so I avoid them because they aren't favorites anyway.

I like butter and ghee, but only from pastured cows; some experts will say they are unhealthy because of the saturated fat. Others say they can be good sources of CLA and K2.

Here's take:

Good oils are non-hydrogenated, non-GMO, and cold or expeller pressed as opposed to solvent extracted.

Cholesterol is only found in animal foods, so the only fat I've mentioned that would have cholesterol is butter.

Hi Molifien, good to speak to you.

Also remember that if you are trying to monitor your calories, all fats are 9 calories per gram, regardless of whether they are trans, hydrogenates, saturates, poly's or mono's.

There are also different types of saturates as well. Long chain fatty acids / triglycerides can clog up the arteries, but short and medium chain acids / triglycerides, convert to energy in your liver, by ending up in your lymphatic system.

Also coconut oil is quite heat stable, but avoid any ice creams that contain hydrogenated coconut oil.

Also be wary of EVCO, Extra Virgin Coconut Oil, because unlike EVOO, Extra Virgin Olive Oil, it is just a marketing gimmick and calling it extra virgin has potentially no added benefits or quality over basic CO, as opposed to EVOO which is purer than OO.

Heat stable oils like coconut oil are good for cooking with, but you might want to research "smoke point" of fats, as some fats are not very heat stable, like flax seed oil and if you cook with those and it breaches the smoke point, the fat can undergo a toxic conversion and convert into a carcinogen, so cooking regularly with low heat tolerance fats, could increase cancer risk.

The only issue with smoke point charts, is that they don't tend to give examples of what constitutes a breach of smoke point, i.e. how long you use a gas or electricity supply to cook with and what intensity that energy source would have to be on.

Agreed. Avoid trans fats whenever possible. These are universally considered bad for your health. Other fats found in oil are generally good for your body, as long as you're not overdoing it and still keeping track of what you eat. Good luck!
