Hi Missdee,

All questions are valid and when eating clean, all questions are definitely relevant! :D

Lean beef is important, trimming the fat before you cook it!
Sirloin is a good cut to do this but can get expensive.
Blade steak isn't too bad either to trim nicely...
If doing a meat pasta sauce or tacos use at minimum "lean" but try "extra lean" or try using lean ground chicken. Also drain the fat from the meat after browning before adding to a dish.
I personally recommend beef once a week maybe 2x....
If you talk to chefs the more marbling (fat throughout the meat) the better flavor and more desirable. However, how you cook it can make all the difference!

So look for lean and extra lean cuts in all your beef, trim the visible fat before cooking and drain fat before mixing with other foods.
Hope this helps some,

Chris

Alternatively you can also trim some of the fat off after you've cooked it and it might be a bit easier when the fat has firmed up a bit, as opposed to having a bit more give when it's still raw.

I like cooking red meat on the Foreman grill, so all the excess fat drains off in to the drip container.

I bet there's a few poncy looking sportspeople who own Foreman grills, who might be tempted to put the excess fat in their hair .

Not that I'm saying all sportspeople are poncy looking as that's unfair; just people like David Beckham for example.
