Re: Vegan Nutrition
One thing vegans are supposed to possibly need is a vit b12, (cyanocobalamin), supplement owing to the possible lack of b12 in their diets, which you may already be aware of or not I'm not sure.
Obviously you know most of the things you eat already, so this list of foods is not trying to make you suck eggs, but possibly identify things you were not aware of.
Peas, beans, lentils, olives, mushrooms, quorn, soy products like soybeans, nattokinase, tofu, miso and edemame, fruits, veggies, nuts, peanuts, rice and other grains like wheat, barley, spelt, corn, millet, quinoa, bulgar wheat, chia, salba, teff, triticale, bulgar wheat, wholewheat pasta, seeds like flaxseed, bean sprouts, cress, parsley and other herbs, edible oils and seaweed products, depending on what seaweed products you might have in America.
Some people will say that complimentary proteins should be eaten together, like beans and rice, or wheat products and peas, because you get a full compliment of amino acids together in one meal and they won't get used properly otherwise, but I think it might be plausible to have these things seperately, without any issues relating to how the body uses them, as a fair proportion of vegan foods are complimentary proteins, so I don't think they need to be combined personally.
You have enough there for some interesting meals, like
A: Vegan stir-fry, using different things like mini corn cobs, peppers, mushrooms, rice, peas, beans, chestnuts, bean sprouts etc.
B: Whole-grain breakfast with fruit which could include the cereal sprinkled with flaxseeds.
C: Mushroom, rice and peas, with some kind of edible oil on it.
D: Fruit salad.
E: A spicy salad, using things like tomatos, lettuce, cucumber, then add some hot chilies or jalapenos and some cooked beans or lentils for protein, to get a contrast between the hot and cool elements.
F: Meat free sandwiches.
G: Whole-wheat pasta with tomato sauce and mushrooms.
Maybe some of this information could be useful to you.
