coconut oil
I just got some organic coconut oil from whole foods for some recipes I wanna try. Can anyone give me some info on health benefits of using this? Perhaps in place of dairy?

Coconut Oil contains Lauric Acid, Caproic Acid and Caprylic Acid, which are saturates, however unlike normal saturates, these are called MCT's, (Medium Chain Triglycerides). I admit to not knowing the difference in chemical structure, but unlike normal saturates that can end up forming Triglycerides in the subcutaneous layer, or potentially contributing to atheromas and arterial plaque in the arteries, they convert to energy in the liver.
Coconut Oil also has a very good smoke point and is very heat stable. Fats with poor smoke points I.E. flaxseed oil, can, when exposed to intolerable heat levels during cooking, burn or undergo a carcinogenic / toxic reaction, meaning anything you are cooking, could become something that elevates cancer risk, if you cooked with that oil and caused that reaction on a regular basis.
This means coconut oil is good for cooking with. The worst kind which I doubt you bought, assuming it's commercially available, (I'm not sure about that), is hydrogenated coconut oil, sometimes used in ice cream manufacturing, as that represents a toxicity risk, because hydrogenates are saturates pumped with hydrogen and the body reacts in an unwell manner to that, as hydrogenates are foreign to the body and not something the body knows how to cope with very well.
The one thing ot beware of is something called EVCO, (Extra Virgin Coconut Oil), as I'm pretty sure that unlike EVOO, (Extra Virgin Olive Oil), which is made with a slightly different method and is a recognised trademark, compared to regular Olive Oil, EVCO I'm 95% certain is just a marketing strategy and not a recognised, certified process, so anything with Extra Vigrin Coconut Oil on it, could in all possibility have no increased benefit or purity, over something that says Coconut Oil, but it may well cost you more for basically the exact same thing.
Hopefully that clarifies a few things regarding what you asked about.
Don't dismiss dariy totally though, as Danish studies have shown that dairy calcium, (not sure about other calcium sources), can increase fat excretion by around 25%-30%, because the fat can bind to the calcium and be channelled out of peoples bodies, via the colorectal passage.
However if you are mentioning dairy because of something like Lactose intolerance, then you will have ignore what I said on a practical level at least, as the biological reaction I just described, will be worthless to you.

Hi, coconut oil is delicious to bake with instead of butter or shortening. Although I am still unclear as to why coconut oil is supposed to be better for you than butter. I have been trying to get mom to stop using so much fat when she cooks, so I bought some coconut oil and made some biscuits. They were light and flaky and great with applesauce. Probably wasn't the healthiest thing to eat, but better than using crisco, white flour, and topping with butter. I like EVOO and canola oil better, but coconut oil is also nice for stirfrying chicken and veggies and a million other things (like mushrooms.) I still miss fried mushrooms in butter, and here it is almost mushroom season where I live.
