I us an elliptical machine

and I can go for about 30 minutes with a good amount of resistance with no problem.
then I go play basketball and after 2 minutes I am winded.
can someone please explain why this is and I guess what exercises I can do at the gym so that I am not winded so easily.

It may be the case that your body is not sued ot that explosive movement, as you may be adapting quite a lot of your cardiovascular system, but that can have some effects on slow twitch muscle fibre, but explosive stuff like sprinting, or basketball, baseball, martial arts etc, adapts the fast twitch fibres and there you may not be used to the sprinting and jumping that basketball entails.

I suspect 2 minutes is probably a slight under exaggeration, though I would understand if you were toasted after 5-6 minutes, though I'm not saying your assessment of how long it took to get winded is wrong, so I'm not meaning to call you on that or make you out to be a liar :).

I'd suggest continuing to persevere with it and might be wise to consider at least 3 days a week of weights, to gain more development of the muscles and aid things like accelleration and vertcial jumps.

Also make sure your diet is good enough on basketball games. You may be fuelling more on cardio says, and if so, you might be lacking some of the energy basketball would require, if you're eating less on those days.

If you are eating less, add another 1-2 meals in and consider making the carbs around 30-40% of the intake for those 1-2 meals, especially if you do weights.

They are very different cardiovascular activities. An eliptical machine is a smooth exercise that elevates the heart rate consistently. In essence you keep that rate consistent for durations of time. Basketball is like doing wind sprints. Your heart goes from a relatively basal rate to an explosive rate. The basketball activity even though cardiovascular is relatively anaerobic, while the eliptical is cardiovascular but more aerobic as long as there is a cadent breathing rate. If you want to be more prepared for basketball, your cardiovascular activity should be more balistic like that of wind sprints. I would venture to bet if you trained like this, you would be less "winded" when playing basketball!

how does weight training increase endurance?

If I stop eating carbs, what should I eat (no meat please).

so I can still use the elliptical, but switch to hill or interval training mode, right?

(It doesn't pe se, but it gives you more strength to assist with the basketball, so you can create more explosive movement, like accelleration, vertical jumps etc, but as added muscle burns an extra 45-50 calories per day, if you gained some muscle and trimmed a little fat off at the same time, you'd be faster and lighter and your body wouldn't be exerting itself with as much weight, even if your weight is in an okay range, but it dropped by 2-3 lbs, that could make a bit of difference to endurance, when the heart and lungs aren't having to cope with that 2-3lbs.)

(Don't stop eating carbs and I'm not entirely sure where I may have intimated that you should. I stipulated if you add extra meals into a plan, you should have a variable percentage of 30-40% for carb intake, in relation to calories for that meal, but I didn't stipulate not eating carbs at all, unless you just came to your own conclusion that that's what you should do.)

(Yes, there's no issue using the elliptical. If you want to alter the way you use it that's fine) :).

As a general rule you should train your body in the way you intend to use your body.

For basket ball, the classic training method is to run back and forth across the length of the court for several laps.

The eliptical training is good for your base cardio vascular training. Try running both repeated lengths of the court and repeated widths of the court. Ten of each two or three times a week. In six weeks you will see a noticable improvement.
