LOL! Too funny! Yeah, people are always looking at me like "are you seriously going to eat that?!" I just smile and eat up and enjoy the looks on their faces!

I'm glad you like the oatmeal and eggs. It sounds funky but actually is darn good! You put salt and pepper on there with the almond butter? I usually do a tiny bit of salt and cinnamon.. I also add protein powder to make it taste sweeter. coworker was looking at me funny as i was making it yesterday so i said "Mmmm Mmmm Mmmmm tastes just like Ice cream only hot!". She just shook her head and left the room. I was cracking myself up.

Boopster in the house to get your butt in gear girl! First of all, I must say I absolutely LOVE LOVE LOVE your avatar. What a hoot! You have to be one of those cool mom's that just love the heck out of your kids and want to make their lives the best that it can be. Welcome to the best exercise, diet and nutrition forum around. Cassie has given you some great advice...she knows her stuff so definitely subscribe to her knowledge. The stuffed burgers are awesome and it's a great way to sneak veggies in that you may not eat individually but hiding them may make them a bit more palatable.

Sweet potato fries are one of absolute favorites. Just slice those bad boys up and throw them on foiled lined pan that you sprayed with a little olive oil and place sliced sweet taters on the pan bake 450 degrees for about 20-30 minutes....wah lah...sweet sugary goodness that's healthy and better for you than regular fries :wink:

Have you dabbled in wraps? You can find some great tasting whole grain/ whole wheat wraps that you can stuff with lean meats like turkey and chicken, low fat cheese, some salad and boom, super fast and healthy lunch. I make fresh guacamole with avocado, lime juice, fresh cilantro, and a bit of fresh garlic and use that in place of mayo. The avocado has healthy fats your body needs. When I'm in a super hurry and don't have any wraps in hand, I take a couple pieces of sliced turkey breast and load the guacamole inside, wrap it up in a lettuce leaf or throw some spinach in there and I have lunch on the go. It's really yummy.

You can also try hummus spread which is basically chick peas or really any type of canned white bean that you puree in a food processor, add some garlic, bay leaves, sesame paste, rosemary, 1 lemon, and dash of salt and some extra virgin olive oil...OMG!!! It's to die for. Just like mayo but better. I have this as a sandwich topper or with slices of whole wheat pita bread. You can also add artichoke hearts to it for more flavor.

I also have a few classic recipes I like to make that kids totally love too:

Marsala Chicken

Chicken breast
Marsala cooking wine
Sliced Mushrooms and onions if you like
salt and pepper to season
skim milk
corn starch
olive oil

Pound out chicken breast to tenderize and make as thin as possible. Season with a bit of salt and pepper. Add 2-3 Tbls. Olive oil to a pan and heat on high temp. Turn heat down and saute' chicken breasts until both sides are golden brown (about 5-6 minutes per side depending on thickness). Add mushrooms and the onions if you like them, saute for 2-3 minutes. Add 1 Cup Marsala cooking wine and turn down to a simmer, cook until chicken is no longer pink and juices run clear. Mix 1 Tbls. Corn starch with 1/2 C. skim milk and whisk into chicken and wine mixture until well blended and sauce thickens a bit. Serve. You can also do this with turkey breast.


Turkey Chili

1 pound ground turkey/ chicken/ or Bambi
1 packet of low sodium chili mix
1 can kidney beans
1 can chopped/diced tomatoes
cheddar cheese to top off

Make according to directions on chili seasoning packet.


Yogurt and Cottage cheese (snack)

Mix 3/4 C low fat cottage cheese
1/4 C light yogurt
top with any raw nuts you wish

And Cassie's sweet potato bars are AWESOME!!!! kids love them and I cannot make them fast enough.

Being a mom with a crazy life can take it's toll, but just make sure you are taking time for yourself. As mom's we have tendency to feel guilty or selfish when we do something good for ourselves. But if I have said it once, I will say it again. Taking care of yourself is the absolute best gift you can give your children. You are showing them that caring for your body is important and the rewards will be endless for you and them. I am a better wife, mother, daughter, and friend because I make point everyday to do something good for body. Whether that be a really challenging workout at the gym or a nice long bike ride with kids. Lead by example and they will follow in your footsteps.

Cassie gave you some great advice for your workouts do stick with those and continue to work on your diet. Great job wit the soda! That stuff is sooooo bad for you.

Ladies you rock!!!! Thank you so much Boopster for all the info, the compliments and the support!!! It's very much appreciated and welcomed. (even the butt kicking!!!)

I am printing all this stuff out and tomorrow I am buying a small notebook and writing all this down since I am a very visual person.

Love the recipe ideas from you ladies, I am going to have so much fun trying to make this stuff.. very excited.. when boys get back from vacation they are not going to know what happened in our kitchen..hehe

I LOVE boys very much and we all love to be super goofy together, that I can definitely lead by example and I need to incorporate that into our eating as well, sons are gaining weight and its breaking heart to know that I have the power to stop it and haven't.. so NO MORE... victim time is over.. time to get in gear and I think I have definitely found the right forum and people to help me.. so again thank you so much for all the responses and quick replies and support.

I will be taking some pics and measurements and doing some grocery shopping this weekend.. I am very excited.. I love projects...hehe

I know what you mean being cranky when hungry!
I’m like a mad woman hunting for food and NO one better get in way! :twisted:

By having that said… I don’t wait for myself to get hungry anymore.
I make sure I eat every 2.5-3 hours... I eat like 6-7 times a day.
Depending how late I have to work (2 jobs)

I realized by leaving myself starving.. I would eat anything and everything I see!
99% of that time.. that would be Junk Food!

Now, I can better control myself because I pack healthy food around me all the time!

As for Mix nuts… I usually just have almonds! Those are fav!
However, when I do feel a little mixing.. I’ll have cashews, walnuts, and almonds together..
If I want some sweets in there.. I add dried cranberries or dried blue berries!

Nuts are very good for snacks but you have to portion your size because it’s also high in calories!

I recently started the sauna … Never used them before.. But I do enjoy them after a work out.
If you want to use the sauna for relaxation after a workout, I would stick with it.
Instead of going to the sauna before a workout... use that time to do a light stretch…
Do major stretching after a workout because you don’t want to stretch with cold muscle.
Or like Cassie mentioned… Hop on the treadmill for 5-10mins before a workout.

When I have extra 10-15mins after a workout & already stretched… I go to the steam room and enjoy.
However, if you EVER feel like it’s too hot or you get light headed from it... GET OUT of there!
Someone actually fainted in there… it was not a good scene! :?

Yeah… I put some salt, black pepper, and almond butter.
Sometimes teeth hurt so bad because of the braces, I can’t enjoy almond nuts!

It’s not a bad taste… because oatmeal is plain… it taste like rice to me..
All I am doing is add eggs!

One time, I added... Protein powder, salt, black pepper, and almond butter… YUCK!

Now I know... protein powder should be added by itself when I want oatmeal sweet!

I was actually considering adding hot sauce… but I think I might just kill the flovor!
And taste to enjoy a regular oatmeal will not be the same! :?
