Whey constitutes 30% of Milk, the other 70% is Casein.
When you convert Milk into Cheese, the Whey is extracted to make Cheese and I think the remainder is used to make Curds, hence the expression Curds and Whey, but don't quote me on that Curd thing, I'm not certain.
Whey is quicker digesting than Casein. Whey 4 calories per gram, Casein 8.
