Myth or true ?
I've been told, again the question may appear as stupid, that egg's white protein absorbtion is higher when bake compare to non-bake ... Is that true ? 

That's not even an issue.
Egg Whites contain an organism which can cause Salmonella poisoning.
Cooking Eggs kills it, and it doesn't matter if the Hens win best of show at the county fair, 5 years running, and get sung lullabyes at night, or they live in their own faeces, I don't think living conditions, have any bearing on that organism being in the Eggs.
So screw absorption rate comparisons, just cook the suckers unless you want potentially several days, crocked with a gastic problem.
